Thyme in flower, Central Otago. Image courtesy of Kay Cooke.
Wild thyme thrives in the mountains of Central Otago, New Zealand. We handpick the herb when the flowers have opened to the heat of the sun, and the bees are at their busiest. This makes sure that the flowers are at their most potent.
